The Fairmont Waterfront Hotel, in Vancouver, has received the Environmentally Responsible Tourism Award 2010 for its effective and original ideas to be, not only more sustainable, but to help their customers to be it. 

Fairmont hotels, renowned for its strong commitment to sustainability, have managed to combine the exclusivity of its hotels with their original and effective. Their ideas are not only consistent with their philosophy, but also allow to increase the quality of its services and facilities and its international appeal.

What were their efforts?

One of the most striking is the Herb Garden: a large garden located on the third floor where they are mixed flowers, trees with more than 60 varieties of herbs, vegetables, fruits … all lovingly cultivated green, going direct from the garden, chef´s table, and then to your dishes.

Moreover, they have decided to install their own panels, so that more than 500,000 bees make their home garden from May to September, what has not only increased production through pollination, but the honey produced is so fine and serves to create new dishes inspired by it.

The commitment extends to other products through a network of partnerships with suppliers: farms and producers of wine, meat, fish and working with processes based on sustainability, allowing them to ensure that their menus are 100 organically %.
